Activity Monitor is self-hosted — your log never leaves your server — and includes controls to help you meet data-minimisation requirements.
IP anonymisation
Enable Anonymise IP addresses under Settings → Privacy to mask the last octet of stored IPs (e.g. 203.0.113.0). This applies to newly logged events.
Retention
Set how long events are kept; older events are deleted automatically by a daily cleanup. With premium archiving, expiring events are gzipped to a downloadable file first. Times are stored in GMT and displayed in your site timezone.
